Vinification of Petruskellerei Blauburgunder
The basis for the elegant Blauburgunder from Italy is grapes from the Pinot Noir variety. When perfectly ripe, the grapes for Blauburgunder are harvested exclusively by hand without the help of coarse and minimally selective grape harvesters. After the hand harvest, the grapes are immediately taken to the press house. Here, they are sorted and gently crushed. This is followed by fermentation in small oak barrels at controlled temperatures. After fermentation, the nimble Blauburgunder is further matured for 12 months in oak barrels.
