Here, the vines sink their roots deep into soils of clay and volcanic rock. After harvesting, the grapes are brought to the winery immediately. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation is complete, the elegant Carmenere Progetto Recupero is aged for another 3 months in oak barrels.
