Vinification of the Ireneo Cabernet Sauvignon Colli Euganei from La Montecchia
The starting point for the first-class and wonderfully powerful Ireneo Cabernet Sauvignon Colli Euganei cuvée from La Montecchia are Cabernet Sauvignon, Carmenère and Merlot grapes. In Veneto, the vines that produce the grapes for this wine grow on volcanic rock soils. After the grape harvest, the grapes are quickly brought to the press house. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks and small wooden barrels at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
