With Vignato Virgilio Ja-To, a first-class red wine flows into the swirled glass. Here it reveals a wonderfully dense, purple-red color. The nose of this red wine from Veneto captivates with aromas of raspberry and acacia. Pursuing the bouquet further, red currant and black cherry join in.
On the palate, Vignato Virgilio’s Ja-To starts off delightfully aromatic, fruit-driven and balanced. Powerful and multi-faceted, this dense, velvety and fleshy red wine presents itself on the palate. On the finish, this wine from the Veneto wine-growing region finally delights with a beautiful length. Nuances of raspberry and acacia appear once again. In the aftertaste, mineral notes from the clay-dominated soils are also added.
Vinification of Ja-To by Vignato Virgilio
The basis for the first-class and wonderfully powerful Ja-To cuvée from Vignato Virgilio is Cabernet Sauvignon and Merlot grapes. The grapes grow under optimal conditions in Veneto. Here, the vines sink their roots deep into clay soils. After the harvest, the grapes are quickly brought to the winery. There they are sorted and gently crushed. Fermentation in stainless steel tanks and small wooden barrels follows at controlled temperatures. After fermentation is complete, Ja-To can continue to harmonize on the fine lees for 12 months.
Food recommendation for Ja-To by Vignato Virgilio
This Italian red wine is best enjoyed at a temperature of 15–18°C. It pairs perfectly as an accompaniment to duck breast with sugar snap peas, boeuf bourguignon, or lamb ragout with chickpeas and dried figs.
