In Emilia-Romagna, the vines that produce the grapes for this wine grow on clay soils. After the harvest, the grapes are quickly brought to the press house. There they are sorted and gently crushed. This is followed by the fermentation of the base wines. After the assemblage of the cuvée, the further maturation takes place using the traditional bottle fermentation method. This is followed by bottle aging for 33 months.
