Vinification of the Chianti DOCG from Podere di Marcialla
The basis for the first-class and wonderfully balanced Chianti cuvée from Marcialla is Canaiolo, Colorino and Sangiovese grapes. After harvesting, the grapes are quickly brought to the winery. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by several months of aging on the fine lees before the wine is finally racked. After the wine has been completed, the Chianti is gently harmonized.
