Vinification of Dosaggio Zero Nativus by Baldessari Michela
The balanced Dosaggio Zero Nativus from Italy is a varietal wine, organically vinified from the Chardonnay grape variety. In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on clay soils. Dosaggio Zero Nativus is an Old World wine through and through, as this Italian breathes an exceptional European charm that clearly underscores the success of wines from the Old World. The ripeness of the harvested grapes for this Chardonnay-based wine is influenced to a not insignificant extent by the climate of the growing region. In Trentino-Alto Adige, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and even grapes and a rather moderate must weight. After manual harvesting, the grapes are quickly brought to the press house. There they are selected and gently crushed. This is followed by the fermentation of the base wines. After the cuvée is assembled, the further maturation takes place on the basis of the méthode traditionnelle.
