Vinification of Vadiaperti-Traerte Fiano di Avellino
The base for the elegant Fiano di Avellino from Campania is grapes from the Fiano varietal. In Campania, the vines that produce the grapes for this wine grow in clay soils. When physiological ripeness is assured, the grapes for Fiano di Avellino are harvested exclusively by hand, avoiding strenuous and less selective machine harvesters. After picking, the grapes are rapidly transported to the press house. Here, they are sorted and gently crushed. Subsequently, fermentation occurs in bottle fermentation at controlled temperatures. The fermentation is followed by several months of aging on fine lees before the wine is finally bottled.
