Vinification of Komjanc Simon Sauvignon Collio
This white wine clearly focuses on a single grape variety, namely Sauvignon Blanc. Only premium grape harvests were used for this exceptionally balanced, varietal wine by Komjanc Simon. In Friuli-Venezia Giulia, the vines producing the grapes for this wine grow in clay soils. The grapes for this Italian white wine are harvested exclusively by hand when perfectly ripe. After the harvest, the grapes are quickly taken to the winery, where they are sorted and gently crushed. Subsequent fermentation takes place in bottle fermentation at controlled temperatures. The fermentation is followed by several months of aging on fine lees before the wine is finally racked.
