The vines sink their roots deep into sandy soils here. When they are perfectly ripe, the grapes for Klausner Grey Burgundy are harvested exclusively by hand without the help of coarse and less selective harvesters. After harvest, the grapes are quickly brought to the press house. Here they are selected and gently crushed. Subsequently, fermentation takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by several months of aging on fine lees before the wine is finally racked off.
