Vinification of Castelfeder Pinot Grigio 15

This Pinot Grigio 15 comes from the Unterlander vineyards in South Tyrol, where Castelfeder's grapes grow on sandy calcareous gravel soils. After hand-harvesting, the grapes are gently pressed, and the must is fermented in stainless steel tanks. After fermentation, the Pinot Grigio 15 matures on the fine lees for an additional 6 months before finally being bottled.
