Vinification of Castelfeder Raif Sauvignon
The grapes for this South Tyrolean white wine classic come from select vineyards in South Tyrol's lower plains, where Castelfeder has planted on sandy gravel soils with a density of 5,000 – 7,500 vines per hectare. After hand-harvesting the grapes from 15- to 20-year-old Sauvignon Blanc vines, they are destemmed and undergo a 12-hour cold maceration to extract as many aromas as possible from the skins. Following gentle pressing, the alcoholic fermentation occurs in stainless steel tanks, followed by a six-month maturation of the Raif Sauvignon Blanc on the fine lees.
