The Conte della Vipera Umbria from the Umbria wine-growing region reveals itself in the glass in a brilliantly shimmering light yellow. When swirling the wine glass, this white wine is characterized by a wonderful lightness that makes it dance in the glass with verve. The first nose of the Conte della Vipera Umbria is flattering with notes of peaches, grapefruit and lime. The fruity parts of the bouquet are joined by even more fruity, balsamic nuances.

The Castello della Sala Conte della Vipera Umbria is pleasantly dry for wine lovers. This white wine is never coarse or austere, as you would expect from a top-quality wine. On the palate, the texture of this light-footed white wine is wonderfully crisp, melting and creamy. On the finish, this youthful white wine from the Umbria wine-growing region impresses with its considerable length. Once again, there are hints of star fruit and orange. Mineral notes from the limestone and sand-dominated soil are added to the finish.

Vinification of the Castello della Sala Conte della Vipera Umbria

The elegant Conte della Vipera Umbria from Italy is a cuvée made from the Sauvignon Blanc and Semillon grape varieties. The grapes grow under optimal conditions in Umbria. Here, the vines dig their roots deep into soils of sand, limestone and marl. The Conte della Vipera Umbria is an Old World wine through and through, as this Italian wine exudes an extraordinary European charm that clearly underlines the success of wines from the Old World. The grapes for this white wine from Italy are harvested exclusively by hand at the time of optimum ripeness. After the harvest, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by maturation on the fine lees for several months before the wine is finally drawn off. The ageing in the barrel is followed by a long period of maturation in the bottle, which makes this white wine even more complex.

Dining recommendation for the Conte della Vipera Umbria from Castello della Sala

Ideally, enjoy this white wine from Italy well chilled at 8 - 10°C as an accompaniment to coconut-lime fish curry, fruity endive salad or wok vegetables with fish.
