The Valbuins Sauvignon Blanc Collio DOC from Livon pleases the eye with a bright straw yellow color with greenish reflections. The nose reveals an intense bouquet with planty and vegetal aromas that are almost reminiscent of wild grasses, typical varietal aromas of green bell pepper, sage, peach and tomato leaves. On the palate, this Sauvignon Blanc Cru from Collio is full-bodied, dry, soft and balanced, with a lingering aromatic finish.

Vinification of the Valbuins Sauvignon Blanc Collio DOC from Livon

This cru takes its name from the vineyard of the same name in the village of Ruttars in Dolegna del Collio. This is where the Sauvignon Blanc grapes for this fragrant and full-bodied wine grow on clay marl soils. After manual harvesting, the grapes are cold macerated in the horizontal press for eight hours, after which the must is clarified by natural decantation. The subsequent alcoholic fermentation takes place entirely in stainless steel tanks at a controlled temperature of 14° to 16°C and remains in the same containers for eight months to mature at a constant temperature. After bottling, the wine remains in the bottle for some time before being released for sale.
The Valbuins Cru can be kept for 6 to 10 years if stored well.
