Vinification of the Nero d'Avola Terre Siciliane IGT from Cusumano
After manual harvesting, the grapes are destemmed, cold macerated for 2 days and then fermented at 26°-28°Celsius. Malolactic fermentation in stainless steel tanks on the fine lees lasts at least five months.
