Vinification of the Villa Persani Nero Silvo

The vines root deeply into clay soils here. When they are perfectly ripe, the grapes for the nero silvo are hand-harvested exclusively, without the help of coarse and less selective machinery. After manual picking, the grapes are quickly taken to the winery. Here, they are sorted and gently crushed. Then, fermentation takes place in large wooden tanks at controlled temperatures. After fermentation, the light-footed nero silvo is aged for a few more months in barrels made of French oak.
