Vinification of Onde Di Sole by Hibiscus
The basis for the balanced Onde Di Sole from Italy is grapes of the Grillo variety. In Sicily, the vines that produce the grapes for this wine grow on volcanic stone soils. After manual harvesting, the grapes are brought to the winery without delay. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by several months of maturation on the fine lees before the wine is finally drawn off.
