On the tongue, this light-footed red wine is characterized by an extraordinarily fleshy, dense and velvety texture. Vinification of Pavana Valsugana by Francesco Poli
The basis for the elegant Pavana Valsugana from Italy consists of grapes of the Pavana variety. After the grape harvest, the grapes are brought to the winery immediately. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
