The elegant Pinot Nero from the Vallarom estate splashes into the glass with a bright light red color. The first nose of the Pinot Nero reveals notes of currant, blueberry, blackberry and sour cherry. The fruity nuances of the bouquet are joined by barrel-aging notes such as blackcurrant, bitter almond and black cherry.
On the palate, Vallarom’s Pinot Nero opens wonderfully dry, grippy and aromatic. On the tongue, this well-balanced red wine is characterized by an exceptionally silky and fleshy texture. The finish of this red wine from the Trentino-Alto Adige wine-growing region, more precisely from Trentino DOC, finally delights with a beautiful aftertaste. The aftertaste is also accompanied by mineral facets from the limestone-dominated soils.
Vinification of the Pinot Nero from Vallarom
The balanced Pinot Nero from Italy is a single-varietal wine, organically vinified from the Pinot Noir grape variety. In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on limestone soils. After the grape harvest, the grapes are quickly brought to the press house. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. After fermentation is complete, the Pinot Nero can continue to harmonize on the fine lees for 12 months.

This Italian red wine is best enjoyed at a tempered 15 - 18°C. It is the perfect companion to boiled fillet of veal with beans and tomatoes, duck breast with sugar snap peas, or sautéed calf’s liver with apples, onions and balsamic sauce.
