Vinification of the Sauvignon from Grillo Iole
This white wine clearly focuses on a single grape variety, namely Sauvignon Blanc. For this exceptionally well-balanced varietal wine from Grillo Iole, only immaculate grape material was used. After hand-picking, the grapes reach the winery as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. The vinification is followed by aging for several months on the fine lees before the wine is finally bottled.
