This wine clearly focuses on a single grape variety, namely Pinot Noir. For this wonderfully balanced varietal wine from Martin Waßmer, only flawless grapes were harvested. The grapes grow under optimal conditions in Baden. Here the vines drive their roots deep into soils of clay, limestone, and loess. The Schlatter Maltesergarten Pinot Noir is quite clearly shaped by the climatic and stylistic factors of Schlatt (DE). In the best sense of the word, this German wine can be described as an Old World wine that presents itself in an exceptionally impressive way. The ripening of the grapes for this Pinot Noir wine is influenced to a significant extent by the climate of the growing region. In Baden, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and even ripening of the grapes and a rather moderate must weight. Once perfect physiological ripeness is ensured, the grapes for the Schlatter Maltesergarten Pinot Noir are harvested exclusively by hand, without the use of coarse, non-selective machinery. After harvesting, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation in small wooden barrels then takes place at controlled temperatures. Fermentation is followed by maturation for several months in oak barrels.
