Vinification of the Tufobianco from Sassotondo
The balanced Tufobianco from Italy is a cuvée made from the grape varieties Greco Bianco, Sauvignon Blanc, and Trebbiano. In Tuscany, the vines that produce the grapes for this wine grow on volcanic soils. After the grape harvest, the grapes are immediately brought to the winery. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by several months of aging on the fine lees before the wine is finally bottled.
