More information about Barolo Fossati DOCG - Borgogno

The Barolo Fossati from Borgogno comes from the Italian DOCG Barolo wine-growing region in Piedmont - a pure, very elegant and first-class red wine.

In the glass, this wine glows a rich purple red with subtle violet highlights. The nose delights with a fruity, spicy bouquet that reveals aromas of red fruits (raspberry, redcurrant and cherries), floral notes and spicy hints of liquorice with a mineral touch. The aromas of the nose are also reflected on the palate of this Italian red wine. The body is wonderfully full-bodied with a powerful structure that encapsulates the dense, velvety texture. Mineral nuances accompany the pleasantly long finish.

Vinification of the Borgogno Fossati Barolo

The grapes for this red wine grow in the Fossati vineyard in the DOCG Barolo wine-growing region. The 3.2-hectare vineyard is located at an altitude of 50 to 290 meters above sea level and faces south-east. The soils are rich in calcareous and clayey marl with a slight sandy component.

The mash is first fermented spontaneously for 12 days in concrete vats using indigenous yeast. This is followed by maceration for a total of 40 days at a constant temperature of 29 degrees Celsius. Once the maceration period is over, malolactic fermentation begins: a total of 15 days at a temperature of 22 degrees Celsius.

After the fermentation process is complete, this red wine is aged for 4 years in large Slavonian oak barrels (volume 4500 liters). Finally, this wine rounds off harmoniously in the bottle for a further 6 months.

Wine recommendation for the Fossati Barolo Borgogno

This dry red wine from Italy is an outstanding accompaniment to roast beef in a dark sauce and hearty side dishes, oven-fresh roast lamb or spicy cheeses.
