More information about Beyond the Clouds Alto Adige DOC - Elena Walch

The highly rated Beyond the Clouds Alto Adige from the wine-growing region Trentino-Alto Adige appears in the glass in a dense light yellow, golden yellow, copper gold. When swirling the glass, this white wine reveals a high viscosity, manifested by distinct church windowing at the glass rim. This Italian cuvée exhibits wonderfully noble and complex notes of honeysuckle, star fruits, mangoes, and guavas in the glass. Additionally, hints of dark chocolate, black tea, and cocoa beans are present.

Elena Walch Beyond the Clouds Alto Adige presents itself to the wine connoisseur as pleasantly dry. This white wine is never coarse or sparse, as befits a wine of its reputation. On the palate, this powerful white wine is characterized by an extremely dense and creamy texture. Its lively fruit acidity reveals the Beyond the Clouds Alto Adige as beautifully fresh and lively on the palate. The well-aged wine from the Trentino-Alto Adige wine region finally delights with considerable length. Once again, hints of cherry blossom and Gallia melon can be noticed. Mineral notes from the limestone-dominated soils also linger in the aftertaste.

Vinification of Elena Walch Beyond the Clouds Alto Adige

This robust Italian white wine is cuvéeed from Chardonnay, Gewürztraminer, and Sauvignon Blanc grapes. The grapes grow under optimal conditions in Trentino-Alto Adige. The vines here root themselves deeply into limestone soils. Clearly, the Beyond the Clouds Alto Adige is also influenced by the climate and winemaking style of Alto Adige / South Tyrol DOC. This Italian can literally be called a wine of the Old World, presenting itself as extraordinarily noble and complex. The berries for this Italian white wine are harvested exclusively by hand once optimal ripeness has been assured. After manual harvesting, the grapes are quickly transported to the press house. Here they are sorted and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. The fermentation is then followed by a 16-month aging in oak barrels. After the wooden barrel aging, the wine undergoes a comprehensive bottle maturation, which adds to its complexity.

Food pairing recommendations for Elena Walch Beyond the Clouds Alto Adige

This Italian white should be enjoyed well chilled at 8 - 10°C. It pairs perfectly as a accompaniment to omelette with salmon and fennel, Thai cucumber salad, or vegetable salad with beetroot.
