The Beyond the Clouds by Elena Walch appears in the glass in an intense yellow and spreads its complex bouquet with the aromas of exotic fruits such as pineapple, floral notes of flowers and flowers, as well as rose leaves and subtle roasted aromas.
This white wine cuvée is dense on the palate and creamy soft, fresh and juicy with a discreet woody note. This complex white wine has a long reverberation.
Vinification for the Beyond the Clouds by Elena Walch
Castel Ringberg is Elena Walch's most important wine cellar. It is located at 350 meters above sea level above Lake Caldaro. The climate is particularly mild here.
On the rather barren calcareous soils, wines are produced with exceptional authenticity.
The different grape varieties are read simultaneously as soon as the Chardonnay is at the peak of its maturity. The other grape varieties bring this cuvée additional flavor and ensure an ideal acidity.
The specialty of the vinification of this wine is the common pressing and fermentation of the grapes in French barrique barrels. After fermentation, a weekly battonage takes place for 3 months. After 10 months of aging in the barrique, the wine is stored for at least 6 months on the bottle.
