The powerful Ciliegiolo Ceresi from Italy is a varietal wine made solely from the Ciliegiolo grape. The grapes for this Italian red wine are harvested exclusively by hand once perfectly ripe. After harvest, the grapes are immediately taken to the press house. Here, they are sorted and gently crushed. This is followed by fermentation in large wood vessels at controlled temperatures. The fermentation is then followed by several months of aging on gross lees before the wine is finally bottled.
