Vinification of the Ngilu Colline di Levanto Rosso by Ca' du Ferra

This balanced Italian red wine is made from the grape varieties Sangiovese, Vermentino Nero, Ciliegiolo, Garnacha, Merlot, and Syrah. The vines that produce the grapes for this wine are grown on clay soils in Liguria. At their optimal ripeness, the grapes for the Ngilu Colline di Levanto Rosso are harvested exclusively by hand, without the use of strenuous or less selective harvesters. After manual harvest, the grapes are quickly taken to the pressing house. Here, they are carefully selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. The vinification concludes with several months of aging on the fine lees before the wine is finally racked off.
