Vinification of Muri-Gries Grauvernatsch
This red wine clearly emphasizes a single grape variety, namely Vernatsch. For this wonderfully balanced, varietally pure wine from Muri-Gries, only immaculate harvest grapes are used. When they are perfectly ripe, the grapes for Grauvernatsch are harvested exclusively by hand using harvesters that are neither strenuous nor highly selective. After harvest, the grapes are immediately transferred to the winery. Here, they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the Grauvernatsch is allowed to harmonize further on the fine lees for several months.
