In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on limestone soils. At optimal ripeness, the grapes for the 708 Chilometri Rosso are harvested exclusively by hand, without the use of strenuous and minimally selective machinery. After harvest, the grapes are immediately transferred to the winery, where they are carefully selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine can further harmonize for several months on the fine lees.
