At first, primarily fruity notes of ripe raspberries, lingonberries, strawberries and cherries reach the nose. Vinification of the Merlot Rosato from Tenuta Ulisse

This top-class rosato was vinified from 100% Merlot grapes grown around Crecchio in the Chieti province of Abruzzo. The vines are rooted here in sandy soils and have already dug their roots deep into the subsoil over 10–20 years. The sandy soil does not provide the vines with too much water, which increases the depth and extent of the roots and allows the grapes to grow particularly concentrated, as they are less diluted. After hand-picking, the grapes are brought immediately to the cellar, crushed and cold-macerated for 12 hours. After pressing the must, fermentation takes place, followed by a maturation period of three months in stainless steel tanks.
