With La Sibilla Passio Falanghina, a first-class dessert wine comes into the crystal-clear glass. There it presents a wonderfully dense, golden-yellow color. On the nose this La Sibilla dessert wine shows all kinds of acacia, prunes, dried apricots and raisins. As if that were not already impressive, further aromas such as almond and honey are added thanks to maturation in stainless steel.

The powerful La Sibilla Passio Falanghina reveals an incredibly fruit-driven taste on the palate, which is due, not least, to its residual sweetness. On the palate, this expressive dessert wine is characterized by an immensely silky, velvety, dense and creamy texture. The finish of this dessert wine from the Campania wine-growing region ultimately delights with a beautiful aftertaste. The aftertaste is also accompanied by mineral notes from the soils dominated by sand and volcanic rock.

Vinification of Passio Falanghina from La Sibilla

The basis for the powerful Passio Falanghina from Campania is grapes of the Falanghina variety. The grapes grow under optimal conditions in Campania. Here, the vines drive their roots deep into soils of sand and volcanic rock. After the grape harvest, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation is complete, the Passio Falanghina can continue to harmonize for several months on the fine lees.

Food recommendation for La Sibilla Passio Falanghina

This Italian should ideally be enjoyed moderately chilled at 11–13°C. It is perfect as an accompanying wine to yogurt mousse with poppy seeds, coconut kefir cream or baked apples with yogurt sauce.
