Vinification of Pietra Bianca Castel del MONTE DOC of Tormaresca
Puglia is best known for its reds, but proves that it is also a region of excellent white wines. This cuvée is made from Chardonnay 90% and Fiano 10% grape varieties.
The grapes are harvested and vinified separately. After harvesting, they are gently pressed and the must is cooled to 10 ° Celsius, which promotes the natural clarification of the must. The Chardonnay is then fermented in French and Hungarian oak barrels under temperature control, left on the yeasts and completely undergoes malolactic fermentation. The fiano, on the other hand, is fermented only in stainless steel tanks, thus preserving the freshness and crispness typical of the grape variety. After a few months of expansion in the wooden barrels, the Chardonnay is transferred to stainless steel tanks where it is combined with the Fiano. Finally, the Pietra Bianca matures in the bottle for a certain time before it is sold.
This elegant wine is produced in the Bocca di Lupo winery of Tormaresca, in the area of La Murgia, in the province of Bari, where you can also find the famous Castel del Monte. The name comes from the typical white stone that farmers encounter in their fields and crush them. The stone dust penetrates into the soil and contributes a substantial part to the taste of the wines ripening here.
