In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on limestone soils. After the grape harvest, the grapes are quickly brought to the press house. There they are sorted and gently crushed. This is followed by the fermentation of the base wines. After the cuvée has been assembled, further maturation follows based on the Méthode Traditionelle. This is followed by 30 months of bottle aging.
