Vinification of Ribolla Gialla Collio from Draga
This well-balanced white wine from Italy is vinified from the Ribolla Gialla grape variety. In Friuli-Venezia Giulia, the vines that produce the grapes for this wine grow on sandstone soils. After being harvested by hand, the grapes are quickly brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally racked.
