Cultivation and vinification of the Rocca Rubia Riserva Carignano del Sulcis DOC of Cantina di Santadi
This wine is made from 100% Carignano. The vines are raised in the Sulcis region in south-western Sardinia as trees in the ancient style of the Latin vine. Grapes for this powerful, tannin-rich wine thrive on the sandy, loamy marbled barren soils. After harvesting and separating from the stalks, the grapes remain in steel tanks for about 14 days at a controlled temperature. Meanwhile, the mash is repeatedly lowered so that the noble tannins, which are particularly rich in the carignano grown in trees, pass into the must. After fermentation, the Rocca Rubia is transferred to new and two-year French barrels, in which it is aged for 10 to 12 months. A few months on the bottle support the wine to develop its rich bouquet.
