The grapes for this Italian red wine are harvested exclusively by hand when perfectly ripe. After the harvest, the grapes are immediately brought to the winery. Here, they are sorted and gently crushed. Subsequently, fermentation takes place in bottle fermentation at controlled temperatures. The vinification is followed by a few months of aging on the fine lees before the wine is finally bottled.
