Vinification for the Brunello di Montalcino DOCG from Collosorbo
The grapes for this 100% Sangiovese wine were harvested by hand and underwent alcoholic fermentation under temperature control with frequent pumping over.
This Brunello matured for around 3 years in large Slavonian and French oak barrels. The wine was then aged for an additional 8 months in the bottle.
