Vinification of the Coppo Camp du Rouss

The name of the Camp du Rouss means "the redhead's field" in Piedmontese dialect. It comes from the first owner of the vineyard, who taught the children of the village to fear with his figure, but was popular and famous for his wines.

The vineyard is located in the south of Asti in Piedmont. It has an extremely favorable south-southwest exposure. The soil consists of a calcareous mixture of loam and clay marl as well as some silt. At an altitude of 650 to 820 meters above sea level, the vineyard is relatively high, which extends the ripening period of the Barbera vines and increases the aromatic potential.

The vines are planted in a medium-density Guyot system. A lot of foliage work is carried out during the vine year and a green harvest ensures that the yield is controlled. The grapes are harvested by hand at optimum ripeness in 40-pound baskets. The grapes are then transported quickly and gently to the wine cellar. During maceration, the must is gently and slowly pumped over several times in order to extract the polyphenols optimally. After fermentation, the wine is matured for 12 months in French oak.
