Vinification of the Contesa di Rocco Pasetti Cerasuolo d'Abruzzo

The balanced Cerasuolo d'Abruzzo from Italy is a single-varietal wine made from the Montepulciano grape variety. In Abruzzo, the vines that produce the grapes for this wine grow on soils of sedimentary and weathered rock. The Cerasuolo d'Abruzzo is clearly characterized by more than just the Abruzzo DOC soil. This Italian wine can be described as an Old World wine in the best sense of the word, with an exceptionally impressive presentation. The grapes for this rosé wine from Italy are picked exclusively by hand when they are perfectly ripe. After harvesting, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by maturation on the fine lees for several months before the wine is finally bottled.

This Italian wine is best enjoyed moderately chilled at 11 - 13°C. It goes perfectly with asparagus salad with quinoa, fruity endive salad or spaghetti with yoghurt-mint pesto.
