Vinification of Dogliani Pianezzo by Boschis Francesco

The balanced Dogliani Pianezzo from Italy is a varietal wine, vinified from the Dolcetto grape variety. In Piedmont, the vines that produce the grapes for this wine grow on limestone soils. After the grape harvest, the grapes are quickly brought to the press house. There they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
