Vinification of Cascina Carlòt’s Dolcetto D’Alba San Rumu
The basis for the balanced Dolcetto D’Alba San Rumu from Piedmont is grapes of the Dolcetto variety. In Piedmont, the vines that produce the grapes for this wine grow on clay and limestone soils. After harvesting, the grapes are brought to the winery without delay. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation is complete, the Dolcetto D’Alba San Rumu can continue to harmonize on the fine lees for 6 months.
