Vinification of Antichi Vigneti Di Cantalupo Ghemme Cantalupo Anno Primo
This red wine clearly focuses on a single grape variety, namely Nebbiolo. For this exceptionally well-balanced varietal wine from Antichi Vigneti Di Cantalupo, only immaculate grape material was used. In Piedmont, the vines that produce the grapes for this wine grow on soils of weathered rock. After being hand-picked, the grapes are quickly taken to the press house. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally bottled.
