Vinification of the Recioto Valpolicella from Villa Spinosa
The starting point for the first-class and wonderfully powerful Recioto Valpolicella cuvée from Villa Spinosa are Corvina and Corvinone grapes. The grapes grow under optimal conditions in Veneto. Here, the vines drive their roots deep into limestone soils. After the harvest, the grapes are brought to the press house as quickly as possible. There, they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. Fermentation is followed by 12 months of maturation in oak barrels.
