Here the vines drive their roots deep into soils of silicate rock. After being harvested by hand, the grapes are quickly brought to the press house. There they are sorted and gently crushed. Fermentation in concrete and small wood follows at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
