This powerful red wine from Italy is cuvéeed from the Malvasia Nera and Negroamaro grape varieties. After hand-picking, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After the end of fermentation, Salento Rosso Don Pepè can continue to harmonize on the fine lees for 18 months.
