Vinification of Domiziano Susumaniello Salento Loris
The basis for the first-class and wonderfully balanced cuvée Susumaniello Salento Loris from Domiziano are Malvasia Nera and Susumaniello grapes. In Apulia, the vines that produce the grapes for this wine grow on clay soils. After hand-picking, the grapes are immediately brought to the press house. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally bottled.
