On the nose, it is powerful and fresh at the same time, with aromas of peppers, spices, ripe fruit, cherries and blackcurrants with hints of sweet tobacco.

On the palate, this Isole e Olena Cabernet is incredibly engaging, soft and juicy, with gentle, aromatic tannins, full-bodied, with good body, a wine with character, elegant and dry on the palate. The finish is fresh, delicately spicy, with notes of dark chocolate and pleasantly persistent.

Vinification of the Cabernet Sauvignon Collezione Privata from Isole e Olena

This top red wine from the Collezione Privata is only produced in small quantities. The grapes are harvested manually, Cabernet Sauvignon with minimal proportions of Cabernt Franc, Merlot and Petit Verdot. After destemming and gentle pressing, maceration and fermentation take place over 4 weeks at a controlled temperature. Ageing takes place over 24 months in barriques, 2/5 of which are new, 97% French oak and a tiny 3% in American oak barriques. After bottling, the Cabernet Sauvignon matures for a further 3 years in the bottle before being released for sale. The Cabernet Sauvignon from Isole e Olena has a storage potential of 10 to 25 years.
