Vinification of the Coda di Volpe Lunajanca by I Borboni

This white wine clearly emphasizes a single grape variety, namely Coda di Volpe. Only flawless grapes are used for this exceptionally well-balanced, single-varietal wine by I Borboni. The grapes grow under optimal conditions in Campania, deep rooted in clay soils. When they reach optimal ripeness, the grapes for the Coda di Volpe Lunajanca are harvested exclusively by hand, without the use of strenuous or less selective harvesters. After harvest, the grapes are immediately taken to the presshouse, where they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. The fermentation is then followed by a few months of aging on the fine lees before the wine is finally bottled.
