Vinification of the Selezione Cadalora Chardonnay from La Cadalora
The basis for the well-balanced Selezione Cadalora Chardonnay from Italy is grapes of the Chardonnay variety. The grapes grow under optimal conditions in Trentino-Alto Adige. Here the vines sink their roots deep into limestone soils. After being harvested by hand, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After it is complete, the elegant Selezione Cadalora Chardonnay is matured for another 12 months in oak barriques.
