The Vallarom Vadum Caesaris presents itself delightfully dry to the wine enthusiast. This white wine never appears coarse or meager, as one might expect from a wine. On the palate, the texture of this well-balanced white wine is wonderfully crisp. On the finish, this wine from the Trentino-Alto Adige wine-growing region delights with a lovely length. Once again, nuances of apricot and lychee appear. In the aftertaste, mineral notes from the limestone-dominated soils join in.

Vinification of Vadum Caesaris from Vallarom

The well-balanced Vadum Caesaris from Italy is a cuvée, organically vinified from the grape varieties Chardonnay, Pinot Blanc, Riesling, Sauvignon Blanc and Pinot Blanc. The grapes grow under optimal conditions in Trentino-Alto Adige. Here the vines drive their roots deep into limestone soils. After harvesting, the grapes are brought to the winery without delay. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally drawn off.

This Italian is best enjoyed well chilled at 8 - 10°C. It is a perfect companion to omelet with salmon and fennel, leek tortilla or stuffed cabbage rolls.
