Vinification of the sweet Angialis Isola dei Nuraghi bianco from Argiolas
Angialis is an excellent dessert wine, a late harvest from perfectly overripe, vine-dried grapes of the Nasco grape variety, an indigenous grape from the island of Sardinia. After manual harvesting late in October and in the first days of November, the grapes are gently pressed and slowly fermented in stainless steel tanks at a constant temperature of 22-25°C. This is followed by ageing in French barriques. This is followed by ageing in French barriques for 12 to 13 months, then stainless steel tanks for 3-4 months and finally a resting period of 6 to 8 months in the bottle. The ageing in barriques lends this enchanting sweet wine its fine vanilla and toffee notes.
Wine pairings for the sweet Angialis from Argiolas
Creamy, chocolatey desserts, crème brulée, but also the typical dry Sardinian wedding cake, Easter tarts with ricotta, as well as pecorino from the island with its spicy note are the ideal accompaniment to this elegant sweet dessert wine from the south of Sardinia.
